Set Up Check List for Karma Kitchen

All Karma Kitchen supplies are housed in the small storeroom at the rear right hand end of the kitchen.

Signage:

  • 1 long rectangular Karma Kitchen Signboard: To be affixed outside the main entrance (just above the door) with sticky foam pads (we store the paper slips covering each pad so that they can be reaffixed at the end of the day.)

Room Layout:

  • Rear corner next to the wine rack:
    • Small table from the right hand rear corner of the restaurant must be moved next to the bigger table at the rear left corner.
    • Tea cups, saucers, (tea dispenser when ready), water glasses, dinner plates, utensil tray, two gray bus bins to be arranged on these tables
    • Wine rack to be covered with folded sari, use decorative vases on top of the rack to hold in place. Wine bottles on top of rack to be placed underneath bus tables in the corner
    • Water jugs on top of the wine rack to be filled with ice cubes and water
  • Activity Table:
    • One large table to the far left of the entrance door set up as the activity table. Smile cards, magazines, cards etc to be arranged on top with the Kindness Table sign set up in the middle and propped against window. Sign-Up sheet with purple clipboard placed also placed on this table.
    • 3-4 Extra chairs lined up next to the activity table

Dining Tables: At the center of each table place ...

  • 1 small sugar packet box at the center of each table
  • Salt & Pepper shakers
  • Regular table settings with dinner plates, folded napkins (maroon cloth napkins in wooden box on the floor behind the register, extra in small storeroom straight behind the kitchen entrance), spoons, forks (no knives), water glasses,
  • All places can to be set with dinner plates except for tables of two (for which thallis will come out filled from the kitchen)
  • Extra chairs can be lined up in the corridor to the bathroom, a couple next to the bus tables, a couple next to the Activity table

Register/Interface Ledge: (all items located in labeled storage drawers in the storage room in the rear right corner of the kitchen)

  • Stack of receipts
  • Black check cases
  • Server Pads
  • Pens
  • Smile Cards & Wisdom scrools
  • Menus for the current week
  • Aprons
  • Tag items (to be placed behind ledge or on activity table as needed

Menu Rotation:

  • Check with the head chef Dhruvaji for what's on the menu that Sunday and bring out the appropriate menus from the back room.

Kitchen:

  • Rubber mats located by the garbage bins in the dishwashing area to be placed one alongside the dishwasher's sinks, one along the Plating counter and the other in the narrow passage between the dishwashing area and the kitchen

Misc Set Up:

  • Light a stick of incense out front -- it's in the upper left drawer of the KK storage chest. This helps dispel any lingering smell of cooking.
  • Cleaning spray & Table wiping towel: To be placed next to the bus bins on rear table (the spray and towel are located in the small storage room in the rear middle of the kitchen)
  • Prem Josh & other CDs: To be placed next to music system
  • Check that all the front lights in the restaurant are switched on
  • Turn on the Open sign after orientation (at 11:00am); if it doesn't turn on, turn on "#12" fuse on the switchboard in the supplies room.
